Owner and Chef Matt has been incredibly supportive and we have loved talking through ideas and recommendations to work closely in collaboration and deliver on our new menu for Winter. We let Matt takeover our blog and allow him to show you his incredible passion for all things local. Saffron Fish Co is a little over two months old now, but around a decade in the making! A “slow burner” if there ever was one, it still makes me catch my breath when I turn the corner and see our ‘Gone Fishing’ blinds.

I’m ‘Matt’ to most – ’Matt the Fish’ or ‘Chef’ to others. The ‘Chef’ nickname comes from the past 22 years working in local restaurants, 19 of which were spent at the Cricketers in Clavering. Being a chef was incredible, but I’ve always been drawn to seafood and felt it was time for a change!

Over the past few years, there seems to have been a real revival of local businesses. We’re so lucky to now have a truly fantastic community of people who are passionate about what they do (be it fish or waffles!). 

I think people enjoy being able to come to town and go to the baker, greengrocer, butcher and now fishmonger – finishing off the trip with a delicious waffle, of course! There’s something quite traditional and homely about it, and it’s great to be a part of.

At Saffron Fish Co, I pride myself on supplying customers with the freshest fish available. I head down to Billingsgate market in the morning – even my dog, Ferguson, no longer lifts his head to say goodbye at 3.30am – and open the shop door at 8am. 

Fish doesn’t need to be flashy or something reserved for special occasions; whether you’re cooking up some super-fresh mackerel for a midweek meal or roasting a whole turbot as a Sunday treat, seafood offers something for everyone. If you’re unsure how to cook it or need some inspiration, I am full of ideas! Just ask and I’ll make sure you walk away with the perfect fish, prepped however you like.

Despite stepping down as Head Chef earlier this year, food will always be a huge part of my life. I’m so honoured to be collaborating with Waffle + Co. Ana and Tori have an incredible ability to pair flavours you might not otherwise consider – and it’s always delicious. A fish and chip waffle! What could be better?

Whenever you’re lucky enough to have Ana and Tori serving food nearby, it’s absolutely essential to visit. Any time they’re in Saffron Walden, I know it’s going to be a good day.
