A bit of background on the life and times of the Waffle Horsebox. We’ve had so many people asking so many questions about how the Horsebox came about and what it’s all about so here’s a little blog post on all things Waffle Wagon. 

June 2019: Ana+Tori receive their beautiful horsebox

A day that had been much anticipated with so much excitement and, of course, a little trepidation all rolled into one. 

We launched Waffle+Co in July 2018. It started as an events company and we wanted to bring the community together through a love of good food (waffles!) and conversation. Early this year we decided that we wanted to head into the next phase; going mobile and being able to offer our waffles in a different format. 

We will still be hosting our events and are very much looking forward to Autumn / Winter when we can bring you back all things Comedy+Waffles, Love+Waffles, Gin+Waffles and WooWoos+Waffles. 

We’ve worked so hard behind the scenes with the much-appreciated help of family and friends to make the Waffle Wagon a reality. You may have noticed that we have been head down that last 6 months (apologies for all the declines we have had to do to social invitations – we’ll get back to being social very soon with you, we promise!) and it’s because we were working and planning the launch of the Horsebox this Summer. Taking on a mobile food van with 5 kids between us is no mean feat, but the bond we have built over the past year together has meant we have to’d and fro’d perfectly to make the dream come alive. 

We stylishly designed the Horsebox ourselves complete with copper trim, vintage lighting and geometric tiles. Having had professional support for our Waffle+Co logo and branding last year thanks to Ana’s husband Darryl, we wanted to keep the essence of our brand in the horsebox and have our style shine through in every way that we could. 

Working closely with a company called Red Cat Timberwork to convert this old beauty of a horsebox – we set about interior designing the box to our own tastes. 

We chose everything from the colour of the horsebox, to the position of the appliances, right down to the vintage copper taps in the double copper sink. 

We’ve learnt so much along the way about setting up a mobile food catering unit and we are currently settling so well into our new home learning still every single day. Thanks to all the food trucks that we have spoken to along the way who have given us support and advice. 

Life before Waffles

This is what the horsebox looked like when we first went to south Essex to take a look at it. We fell in love instantly and despite investigating other food trucks such as a Piaggio and HY Van we decided that the horsebox was totally ‘us’.

Of course, we also needed to find a car fit enough to tow us and our waffle wagon so we set to work with the help of a local friend who kindly came with us on every car viewing and taught us a thing or two about engines, electrics and tow bars. I shall leave the car story for another blog…some of you may know the hassles we had with our first car purchase, but we are super pleased to report that we have now purchased some sturdy wheels to tow us to our gigs. 

You might be interested to know that the Waffle Wagon has two sinks inside and fully functioning copper pipe taps. We have got two fridges, cupboards, shelves, LED lights inside and out, copper fisherman lamps, 2 commercial waffle machines, a deep fat fryer, a griddle and an induction hob. Of course, due to electricity restraints, we can’t use all these appliances at the same time, so we map out our menus super well to match the appliances that we need. 

Our first event was at Bicicletta in our hometown of Saffron Walden, where we hosted a Comedy+Waffles night in conjunction with Big Deal Comedy. We then took to Hillfest in Bishops Stortford where we wowed Stortford with our wondrous waffles.

July 2019: Ana+Tori start their first full month of trading from their Horsebox. 

What a month it was for us, starting with the incredible Street Food event in Saffron Walden – Off The Beaten Truck. We were so honoured to be asked to participate in this fabulous night held in the Market Square, which encourages some of the most fabulous Street Food traders to come and trade and bring the community together. 

We also did an event in Greenwich in London, served waffles to the 200 packed field of cricketers in Wendens Ambo, catered for a cool Summer Corporate Party at the magical grounds of WildWood, spent a day thrilling the Saffron Walden market with our Sweet and Savoury Waffles in our market debut. We headed down to Braintree Street Market to serve Waffles in the pouring rain all day, but what a fab atmosphere those guys have got going on! We also spent the day delighting Saffron Walden Common at the wonderful Team Max event with Sweet+Savoury Waffles.

July 2019 August 2019: Ana+Tori get in the swing.

August has been exceptionally great fun and we have met so many fabulous new people and companies this along the way on our journey so far. 

From serving at the opening night of the Beatles Yesterday movie at Saffron Screen, to Peppa Pig waffles at Saffron Hall, to making our debut in Cambridge thanks to the kind guys and girls at Thirsty Cambridge We created our exquisite Chilli Waffle for the Street Party of Joseph Barnes and braved the wind and storms at Rickling Fete on the pretty village green We finally ended our August events with a Friday night full of Chicken+Waffle deliciousness at Wyle Sky Brewery in Linton.

Our Waffle recipes for the upcoming seasons will all reflect the changing seasons and the ingredients we use will be sourced as locally as we can to support local and reduce those pesky food miles and carbon footprint on the planet! 

Life in a Horsebox has come with so many tales over the past 3 months. Ana and I have loved seeing you all come to the hatch to support us and we thank you so much for helping us take this leap to the next stage of our business.
